Sausage and Three Bean Casserole

This delicious three bean casserole has the tasty addition of pork sausage meat.

Of course you can change most things in a recipe to suit your taste and this recipe is no different.

If you would like to up the lean protein, you can change the pork sausage to lean turkey sausage.

Ingredients:
1 pound bulk pork sausage (or turkey sausage)
2 medium stalks celery, sliced
1 medium onion, chopped
1 large clove garlic, crushed
42 ounces canned baked beans in tomato sauce
15-16 ounces canned lima beans, drained
15-16 ounces canned kidney beans, drained
8 ounces canned tomato sauce
1 tablespoon dry mustard
2 tablespoons honey
1 tablespoon white vinegar
1/4 teaspoon red pepper sauce

Directions:
Heat the oven to 400ºF.

If you have sausage meat that is in casings, remove the casings from the meat. Cook the sausage, celery, onion and garlic in a 10 inch skillet over medium heat for 10 minutes, stirring occasionally, until the sausage is no longer pink. Drain of the fat.

Mix the sausage mixture with the remaining ingredients in an ungreased 3 quart casserole. Bake at 400ºF, uncovered, for about 45 minutes, stirring once, until everything is hot and bubbly.

Makes 8 servings.


Cooking Tips
Tips and Variations:
  • Use turkey sausage in this recipe instead of pork if you want a leaner protein.
  • If you don't like lima beans, simply replace them with another canned bean. White kidney beans, chick peas or pinto beans would work well in this recipe.
  • Change the amount of hot pepper sauce to suit your taste. If you like it spicy, add more. A bit of pepper sauce adds a lot of flavor without making it too hot.

Serving Suggestion:

Serve this bean casserole recipe with a large fresh salad dressed with vinaigrette dressing and some great bread and you have a fantastic simple and easy dinner recipe.

Did You Know?...

There are many wonderful sausages out there now so you don't have to stick to the old standbys. Many of them are quite low fat now too, including some pork sausages.

For this recipe I would use a relatively plain sausage.

You will get other flavors from the garlic, mustard and honey and you want to make sure all the flavors work together well.

Of course you can use dried beans if you prefer and soak and cook them before using them in this recipe, but that is a LOT of work.

Using the canned beans makes this a very quick and easy dinner recipe. Not quite a 30 minute meal, but everything comes together quite quickly and you can go off and do other things while it bakes away.

I would serve this recipe with a large salad full of crunchy vegetables, dressed with your favorite salad dressings.

You will find a large selection of salad dressing recipes here. The basic vinaigrette with Dijon mustard would be perfect because there is a bit of mustard in the casserole.

That and a piece of delicious bread and you have a wonderful meal I hope your family will love.
