Chili For a Crowd

You'll need a big pot for this recipe. I made it when I worked at a ski resort.

Serve it with shredded cheddar cheese and sour cream.

20 pounds of ground beef
3 onions chopped
1/4 cup minced garlic
1/4 cup cumin
2 teaspoons season salt
1/4 cup pepper
1/4 cup basil
1/4 cup celery seed
1/8 cup cayenne pepper
2/3 cup chili powder
1/4 cup oregano
2 no. 10 cans choped tomatoes
4 no. 10 cans kidney beans
3 no 10 cans tomato sauce
1 no 10 can green chilies
1/4 cup parsley
either 1 pkg. au jus or 1/2 c. beef base

Brown ground beef with onions and garlic. Add remaining ingredients, and simmer, stirring occasionally until beans are tender.

Comment from Karen - I would think cooking it all together for an hour or 1 1/4 hours should work well. Thanks Mavis, sounds good.
