With fall in the air we start craving "comfort foods" after eating light meals during the hot summer and what better way to transition than by using "500 Best Comfort Food Recipes" by Johanna Burkhard. This week I did just that.

For the purpose of a review we are asked to try three recipes. The first one I tried was "Chicken Cacciatore." The recipe calls for thighs but I chose to use breasts instead. The strong taste of fresh basil leaves gave the dish an added Italian flare. And, I loved the addition of sun-dried tomatoes. Served with pasta, the dish was very tasty and the left-over's on the third day were even better.

The second recipe I made was "Tuna-Stuffed Potatoes." This is a great recipe for one of those days when you don't have time to spend cooking and yet it ends up looking and tasting like you've spent at least an hour making it. I microwaved the potatoes which took about as much time as to mix the canned tuna with celery, green onion and yogurt. Top this with cheese and put into oven while setting the table and making a pre-mixed salad. Within half-hour we were enjoying a scrumptious "comfort food" meal.

The third recipe I made was "Gruyère Scalloped Potatoes." The one cup of Gruyère cheese made the dish thick and gooey, exactly like scalloped potatoes are supposed to be. The garlic added to the pungent taste of the cheese which made this dish delicious. Because of the high calorie content and richness of this dish I it served with a green salad. I got compliments on this one!

I'm going to be trying out other recipes in "500 Best Comfort Food Recipes" over the winter. Many of the recipes are old classics and the ingredients could be found in a pantry or nearby grocery store. This is nothing fancy, nothing out-of-the-ordinary, just plain home cooking at its best. This might be the only cookbook you need - it has it all.
