Crab Fritters

Small Fritter Crab Yogurt and Lemon
Preparation time: 20 minutes
Cooking time : 15 minutes
For 30 piece
Sauce Ingredients:
- 2 teaspoons grated rind of lemon
- 125 g plain yogurt
- 125 g plain mayonnaise
- Juice lemon
- Salt and pepper
For the crab fritter:
- 250 g grouper fillet dressed
- 1 egg white
- 6 cl fresh single cream
- 250 g crab flesh
- 2 tablespoons chives
- 250 g breadcrumbs
- Oil for the frying
- Salt and pepper
1) Mix the grated rind of lemon and the yogurt in a bowl. Add the lemon juice, salt and pepper. Leave it aside.
2) Mix the grouper fillet, the egg white, salt and pepper.
3) Add the fresh cream, pour the mixture in a terrine and place the terrine in a bigger container full of ice-cubes.
4) Incorporate the crab and the chives.
5) Form 3 cm (just over 1") round balls and coat them in breadcrumbs.
6) Fry the fritter 4 to 6 minutes in very hot oil.
7) Salt and pepper, eat hot with the mayonnaise, yogurt and lemon sauce.
