Double-Chocolate Nut Pudding Cake (Microwave)

Years back the St. Catharines Standard held a yearly cooking contest of which all the best cooks in the Region submitted their favourite recipes. They chose the best to print a special cookbook supplement and awarded great prizes which my friend and I won for 3 years running.

This is one favourite from the Standard recipes which my husband loves as it is a quick and easy dessert.

Try it with various fruits minus the cocoa-or punch it up with your favourite liquor for a special occasion.


l cup unbleached flour
1/2 cup milk
2/3 cup sugar
1 tsp. vanilla
4 tbsp. cocoa
l egg beaten
2 tsp. baking powder
1/2 tsp. salt
1/3 cup chopped walnuts
1/2 cup semi-sweet chipits

Pudding -
2/3 cup light brown sugar
1/4 cup cocoa
1 cup boiling water
(Liquor optional)

Combine and stir together all dry ingredients and chipits. Melt butter in microwave and add to milk and vanilla. Stir into flour mix and add nuts.

Pour into buttered microwave baking dish. In a bowl mix brown sugar, cocoa and boiling water. Pour over cake batter, but do not stir. Cover with paper towel or saran.

Cook on high in microwave for 10 minutes, turning pan after 6 minutes for even cooking.

Serve with whipped cream or ice-cream.
