Easy Rice Salad

(Sudbury, ON, CAN)

2 cups Cooked Instant Rice (cooled)
1 can Sliced or whole button mushrooms
1 can Cooked Chicken
1/2 can Seasoned Green Beans
1/2 can Diced Tomatoes
4 tbs Mayonaise (heaping)
4 tbs Grated Parmesean Cheese
1/2 cup Soya Sauce
1/2 cup Red Onion (finely chopped)
2 tsp Lemon Juice
1 tsp Thyme
1 tsp Ground Black Pepper
1 tsp Parsley
1 tsp Minced Garlic

Mix all ingredients together, sprinkle top with some parmesean cheese, a shake of parsley and a twist or two of pepper for garnish and refrigerate.
