These are homemade desserts and baked goods for more health-conscious people. The authors, Angelina and Ari Dayan, show us how to remove sugar and still get great flavors. Each recipe uses the natural sweetness of fruits and other natural ingredients like honey and maple syrup (still high on the glycemic index), agave syrup, stevia and xylitol, a naturally occurring sugar substitute found in the fibers of many fruits and vegetables (and all three much lower on the glycemic index). The book is jam packed with helpful tips and techniques. In addition, there is valuable information on using alternative sweeteners. I especially love the fact that when a recipe is suitable for Stevia, a natural, 0 carb sweetener, the authors give you detailed information about how to substitute it for the sweetener called for in the recipe.
