Oatmeal Raisin Cookies

I think oatmeal raisin cookies are my absolute favorite.

There is just something about that combination that works every time.

Ingredients:
3/4 cup all purpose flour

1 teaspoon ground cinnamon
1/2 teaspoon baking soda
1/4 teaspoon baking powder
1/4 teaspoon salt
1/4 cup packed brown sugar
1/4 cup granulated sugar
1/3 cup unsweetened applesauce
1/4 cup butter
1 egg white
1 teaspoon vanilla extract
1 1/3 cups quick-cooking oats
3/4 cup raisins

Directions:
Preheat the oven to 375°F. Coat 2 baking sheets with cooking spray.

Sift the flour, cinnamon, baking soda, baking powder and salt together in a large bowl. In a medium bowl, with an electric mixer on medium speed, combine the brown sugar, granulated sugar, applesauce, butter, egg white and vanilla extract. Add to the flour mixture and stir to combine. Stir in the oats and raisins.

Drop the dough by rounded teaspoons onto the prepared baking sheets. Bake at 375°F for 8 minutes or until golden.

Makes about 40 cookies.


Cooking Tips
Variations:
  • Substitute dried cranberries for the raisins called for in the recipe for another healthy cookie alternative.
  • For a sugar free cookie recipe make Splenda oatmeal cookies. Simply replace the sugar with and equal amount of Splenda. Sugar does add texture to the cookie, so you may want to use the 1/2 sugar, 1/2 Splenda blend or the Splenda brown sugar blend to replace the brown sugar in the recipe.
  • As stated above, if you don't like raisins simply leave them out.
  • Adding 1/2 to 3/4 cup chopped walnuts not only tastes great, walnuts are one of the healthiest nuts you can eat. Find out why here.

These really are fairly healthy cookies.

This recipe uses a bit of applesauce to sweeten, so there is not as much sugar as other recipes call for.

The whole batch of cookies has just 1/2 cup of flour in total.

Not bad for a delicious tasting oatmeal raisin cookie recipe.

If you don't like raisins in your oatmeal cookies, it's simple. Just leave them out. Or subsitute with an equal amount of chopped nuts, like healthy walnuts. Walnuts make a great addition to this recipe and certainly add to the healthy cookie idea.

This is such an easy cookie recipe and so yummy and addictive, you will want to make them over and over again.
