This is a delightful and oh so easy grilled chicken marinade recipe.

It is a lemon, olive oil and garlic marinade, with a few other ingredients to flavor it.

Grilled Chicken Marinade

Ingredients

  • 4 to 6 boneless, skinless chicken breasts
  • juice of 1 lemon
  • 2 teaspoons olive oil
  • 1 clove garlic, minced
  • 1/2 teaspoon dried oregano
  • 1 pinch cayenne pepper

Method

Step 1

In a large, shallow, non-metallic dish, arrange the chicken in a single layer. Mix together the lemon juice, oil, garlic, oregano and cayenne in a small bowl. Stir well to thoroughly combine. Pour the mixture over the chicken and turn to coat both sides. Let stand at room temperature for 20 minutes or cover and refrigerate for up to 6 hours.

Step 2

On a greased grill, cook the chicken over hot coals for 4-5 minutes on each side or until the meat is no longer pink inside. Discard the marinade.

Serving Suggestion:

Serve this grilled chicken recipe with grilled corn on the cob (especially in season when it is sweet and fabulous) and a fresh tomato salad for a light lunch or dinner recipe.
