Sausage & Penne Bake

1 tbsp extra virgin olive oil
2 or 3 hot italian sausages (depending on size), cut into bite size chunks
1 tbsp garlic powder
Half an onion, diced
Celery, 2 or 3 stalks, diced
1 each Red & Green peppers, diced
2 cans spaghetti sauce, any kind you like
2 handfuls Penne or egg noodles
2 cups shredded med cheddar cheese
Heat oil in med heat pan, add sausages, onion, celery, and garlic powder. Cook until sausages are done. Add peppers & spaghetti sauce, turn heat to med-low and simmer for 10 minutes. Meanwhile preheat oven to 350 degrees. When sauce is done stir in uncooked noodles then transfer to casserole dish. Top with cheese and bake in oven for 15 minutes, or until noodles are cooked to desired doneness.
Variations: You can pretty much put anything you like in this, such as mushrooms and/or corn. Great recipe for using up leftover veggies.
