Vegan Everyday

Sharing is caring!

I don’t enjoy some vegan cookbooks, but Vegan Everyday: 500 Delicious Recipes is a great cookbook for vegans and meat eaters alike.

Doug McNish, the author, is a vegan executive chef, an instructor and consultant, with a strong commitment to health and organics in his cooking. He is also very knowledgable about food and how to create wonderful flavors. You can see it in his delicious recipes.

The 500 recipes in his cookbook take you through the entire day, from breakfast and lunch to dinner, dessert and snacks. They are familiar, but with delicious twists. Doug is very clever at putting together flavors and in creating much healthier versions of foods we are familiar with. He takes us out of our box and into a wonderful world of fantastic flavors.

One of the things I like about Doug’s recipes is that they are easy to prepare and, for the most part, use foods we are all familiar with and that are easy to find. He does however also introduce you to a few things, especially grains that you may not be as familiar with, like teff and millet. There are several recipes that help you to enjoy many new grains.

All of Doug’s recipes are gluten free, so this is a great cookbook for those who are wheat intolerant. Many of his recipes are fairly low in carbs, so great for diabetics too.

Here are just some of these tasty vegan recipes that even non-vegans will love:

  • Quinoa Sweet Potato Burgers
  • Mushroom Wild Rice Pilaf
  • Hummus Wraps
  • Braised Fennel and Onions with Lentils
  • Maple Chipotle Barbecue Sauce
  • How to Make Your Own Almond Milk, Coconut Milk, Quinoa Milk, Cashew Milk and Flaxseed Milk
  • Roasted Cauliflower and Chickpea Tacos
  • Mushroom and Asparagus Bread Pudding
  • Caramelized Onion and Olive Flatbread
  • Korean Style Tofu Tacos
  • Basil Lemon Ice Cream
  • Apple Strudel Loaf
  • Raspberry Cream Cheese No Bake Brownies
  • Coconut Cream Pineapple
  • Chocolate Hazelnut Waffles

Doug also gives us a primer on vegan pantry staples.

Here are what some people have said about Vegan Everyday: 500 Delicious Recipes on Amazon.com.

From Dee Long comes this review:

Creative Meat-Free Dishes for Every Day of the Year – and Beyond

“This comprehensive volume will appeal primarily to the hardcore vegan, since most all of the recipes are very detailed and use a multitude of ingredients, many of which are likely to be specialty items for regular kitchens. These are serious vegan recipes rather than 1-2-3 quick cooking. We are amazed at how author McNish has managed to turn traditional recipes upside down and inside out to present creative twists that capitalize on the use of fresh fruits, vegetables, herbs and spices. How about a borscht soup that uses quinoa and lentils as a complement to red beets? Or burgers made from quinoa and sweet potatoes, or snack chips created using cashews, kale and bell peppers rather than potatoes? Even if you just decide to observe meatless Mondays and are in need of inspiration, Vegan Everyday gives you more than one new recipe per day to try without repeating the same recipe once throughout the year! With the popularity and selection at local farmer’s markets growing, this is one cookbook that will help you learn how to enjoy previously unfamiliar foodstuffs in delicious, healthful, nutritious colorful dishes without spending a penny for beef, poultry or chicken!”

For vegans, I think this book is a must have.

Even if you aren’t vegan, if you want great non-meat recipes and meal ideas, this is a wonderful cookbook to have on hand. This cookbook is filled with recipes I am going to try. I am keeping it and recommend it.
