Want to eat healthier on a busy schedule? Look to these vegetarian slow cooker recipes from Judith Finlayson’s cookbook, The Vegetarian Slow Cooker: Over 200 Delicious Recipes.

Judith Finlayson is one of my favorite cookbook authors. I have been collecting her cookbooks for quite a few years. Judith really knows how to develop delicious flavors using the slow cooker and has created over 200 new healthy crock pot recipes for her new book.

This cookbook isn’t just for vegetarians. I’m not a vegetarian, but I want to eat healthy and that includes a lot of vegetables and healthy meals. You will find great vegetarian main course recipes for meatless Mondays (or any day of the week for that matter), hot appetizers, side dishes and terrific desserts (including the fabulous Raspberry Custard Cake – Yum!).

Sometimes I have been asked to review cookbooks that I really wouldn’t use very much. They may have great recipes, but I am generally not a fussy cook, so they can be too much work for me. This never happens with one of Judith’s cookbooks and I have already made a couple of recipes from this new healthy slow cooker recipes book and loved them.

The vegetarian slow cooker recipes in this cookbook are very appealing and very user friendly. I love the fact that for just about every recipe, Judith adds tips to help make the recipe even easier and tastier, plus, where possible, she adds instructions for making at least part of the recipe ahead. That’s a real bonus with most of us being so busy.

I am surprised that mine is the first review on this book. I have had it for a couple of years now, and while I don’t tend to use my slow cooker in the summer months, I regularly enjoy it the rest of the year. I use this cookbook about once/week and highly recommend it. I have other slow cooker cookbooks, but this is my favorite. Judith’s recipes do require some preparation before assembly. If you are really in a hurry, you can plop it all in and go like my other cookbooks suggest, but I think the extra step is well worth it.

Favorite recipes include Potato and Pea Coconut Curry, Eggplant Lentil Ragout, Imdian Lentils and Apricots, Leek Risotto, and Potato Curry. YUM!

A must-have for vegetarians on

This is a great book not only for vegetarians, but for anyone conscious of good health. The slow-cooker recipes are varied and delicious. You won’t have to tell them to “eat your vegetables” with the recipes and ideas in this book. It is convenient all year round too because it cooks when you don’t have the time to stand there watching it.
