This banana yogurt parfait makes a perfect healthy dessert or snack. The sweetness comes from the fresh fruit and shredded coconut. If you want it sweeter, add honey or drizzle it over the top of the parfaits.
Mix the yogurt and half of the pineapple in a 2 quart bowl. Stir in the coconut and coriander. Gently fold in about 1/4 of the bananas and papaya.
Ideally, refrigerate the yogurt for 2-4 hours before serving to allow the flavors to meld together. Don't worry about this though. It will taste delicious right away.
Layer a bit of yogurt at the bottom of individual serving bowls. Then add a layer of mixed fruit, then a layer of the yogurt and pineapple mixture. End with a layer of mixed fruit on the top.
Top with more shredded coconut. If desired, drizzle honey over the top of the parfaits.
Notes
The coriander added to the yogurt gives this parfait recipe a bit of an East Indian taste. It's not too much though so I think you will like it. You can replace the coriander with ground nutmeg or cinnamon if you would prefer that.
The time in the refrigerator allows the spice to melt into the yogurt and meld the flavors. If you don't have time to do that during the day, try this tip - mix the yogurt and spice in the morning, leave it in the fridge for the day, then when you are ready to make the parfaits, just mix the fruit in and layer it all. Or make the yogurt mixture before cooking dinner and finish the parfaits just before you serve them.
If you prefer you can substitute sliced strawberries or whole blueberries for the papaya.
