This blueberry cobbler recipe is gluten free, so those who can't tolerate wheat products won't miss out this time. It's simple to make and absolutely fabulous.
2tablespoonsmilk, or milk substitute such as almond milk or soy milk
1/2cupalmonds, sliced, optional, see note below
2tablespoonsturbinado sugar, optional, see note below
1tablespoonegg white, optional, see note below
Instructions
Preheat the oven to 350°F.
Coat an 11" x 7" inch baking dish with nonstick cooking spray. Place the blueberries in the dish. Sprinkle with 1/3 cup of the granulated sugar, then add the orange zest. Toss or stir to coat the berries with the mixture.
For the topping, in a small bowl, combine the baking mix, the remaining granulated sugar, the butter and milk. Mix it together well. Spoon the topping over the blueberry mixture.
Bake in a preheated oven at 350°F for 40-45 minutes or until lightly browned. Remove from the oven and let cool slightly before serving.
