3tablespoonshot pan juices from roasting or pan searing
salt and pepper to taste
2tablespoonsred wine vinegar
2tablespoonsfresh parsley, chopped
After you have roasted or pan seared the meat, pour the hot pan juices into a blender or food processor. Add the salt and pepper, wine vinegar and the chopped parsley. Blend. Open the lid and slowly add the olive oil with the motor still running.
