This recipe is called gingerbread, but it is not to be confused with gingerbread cookies. It is more of a ginger cake, similar in texture to a banana bread or zucchini bread.
Combine the sugar, oil, and eggs in a mixing bowl and beat them together well. Dissolve the baking soda in boiling water and add it to the sugar mixture together with the molasses.
Add the remaining ingredients and mix it together, just until all the lumps are gone. Do not over mix. Pour the batter into a lightly oiled 9x13 inch baking pan.
Bake at 350°F for 30 minutes. Cool the cake before removing it from the pan.
