6green onions, sliced in half, then sliced lengthwise (or 1 small onion, chopped)
1carrot, thinly sliced
1red pepper, cut into julienne strips
1cupsnow peas, whole or sliced
1piecefresh ginger, 1" long, slivered or 1/2 teaspoon ground ginger
2tablespoonssherry, or Chinese cooking wine
Combine the marinade ingredients (soy sauce, sherry, sugar and cornstarch) and mix well. Pour the marinade over the meat and marinate for 30 minutes.
Heat the oil in a skillet or wok. Add the ginger to the pan (sprinkle ginger in the pan if using ground ginger). Add the meat and stir fry about 5 minutes, stirring often.
Remove the meat mixture and it set aside. Add the carrots to the pan and stir fry over high heat for 2-3 minutes, stirring constantly. Add the other vegetables and stir fry for another 2-3 minutes. Add the meat back and heat it all through.
