1 1/2cupsrhubarb, chopped, fresh
Preheat oven to 350ºF.
Cream sugar and shortening together. Add egg and mix. Add baking soda, milk and vanilla. Mix in the flour, then fold in fruit. Pour into a 9" square baking pan and spread evenly in the pan. Mix together the 1/3 cup sugar and 1 teaspoon cinnamon. Sprinkle on the top of the cake.
Bake for 50 - 60 minutes or until a toothpick inserted into the dough portion of the cake comes out clean (the fruit may still be moist).
