These easy peanut cookies are filled with the salty Spanish peanuts that still have their skins on. Every peanut lover you know will love these cookies.
Crush the peanuts with a rolling pin. Place them in a small bowl and stir in the flour.
Beat the eggs. Beat in the sugar. Add the vanilla. Stir in the nut-flour mixture.
Drop onto greased baking sheets. Add extra peanuts on top.
Bake at 300°F until the edges begin to brown, about 7 to 10 minutes. Do not overcook.
Let the pan cool slightly before you remove the cookies. Tap the pan sharply against the table to loosen the cookies from the pan. Remove them to a wire rack to cool completely.
