Grease and flour a loaf pan, 9"x5"x3" or 2 loaf pans that are each 8 1/2" x 4 1/2" x 2 1/2".
Zest enough oranges to get 1 tablespoon plus 1 teaspoon of zest.
Juice the oranges to get 3/4 cup of orange juice.
Place the flour, sugar, baking powder and orange zest in a bowl.
Mix together the oil, milk, orange juice and the egg. Beat together well. Add this mixture to the dry ingredients. Add the chopped apricots.
Beat on medium speed with an electric mixer for 30 seconds or until all the ingredients are well mixed together. Do not mix beyond that.
Pour the batter into your prepared pan(s).
Bake in a preheated oven at 350°F for 55 - 65 minutes or until a toothpick inserted in the center comes out clean.
Once the apricot bread loaf has cooled a bit remove it from the pan(s). Cool thoroughly before slicing.
Makes 1-2 loaves, 12 to 16 slices per loaf.

Optional Suggestions:
Add 1 cup nuts, finely chopped to the batter and mix well before baking.
Date Nut Bread
You can turn this recipe into a wonderful date nut bread. Just omit the orange peel, orange juice and apricots. Increase the milk to 1 1/4 cups and add 1 cup chopped dates. Mix and bake as the recipe for apricot bread states.
