This fish fillet recipe uses the broiler, an underused part of our ovens. It allows you to easily make a recipe that tastes like grilled fish, without the need for a barbecue or indoor grill.
Heat the butter in a small skillet and stir in the salt, pepper, paprika and lemon juice. Arrange the fish on a greased rack in a broiler pan (thin fillets may be placed in the pan without the rack). Brush the fillets with the seasoned butter.
Broil 4-5 inches from the source of heat until the fish flakes with a fork, about 5 to 10 minutes depending on the thickness of the fish fillets. Thick fillets should be turned about halfway through the cooking period.
Sprinkle with chopped fresh parsley and serve with lemon or lime wedges.
