Chocolate salami is a delicious, easy and fun dessert that's perfect with a cup of coffee or on a holiday dessert plate.This recipe can be made gluten free by using gluten free biscuit cookies.
2cupsplain cookies, (tea biscuit type cookies, Arrowroot, Maria biscuits etc.)
1/2cuppistachios, or walnuts, chopped finely
1cupmilk, (or just under)
1 1/4cupsbutter, at room temperature
1/2cupsugar
1/4cupcocoa
1/4cupraisins
1/4cuppowdered sugar, approximately, to roll the salami in
Instructions
The first thing to do is get your butter out so it is at room temperature when you use it.
When the butter is at room temperature, cream it together with the sugar until it is light and fluffy. I do this with an electric mixer, but you can do it by hand too.
Mix in the cocoa powder. Then, add in the milk and stir to incorporate.
Mix together the biscuits, nuts and raisins. Add this mixture to the milk and egg mixture. Stir to combine everything well.
Roll the dough into a log shape and roll the log into powdered sugar.
Wrap the log well with plastic wrap and refrigerate for several hours before serving.
Makes 1 large log or 2 smaller ones. The large log gives you about 24 slices, depending on how thick you slice it.
