1/4cupbutter, softened, or coconut oil (in solid form)
1egg, beaten
1/2cupmilk, or milk alternative
1/2cupcinnamon chips, optional
Instructions
Preheat the oven to 375°F.
For the Streusel Topping:
Combine the brown sugar, chopped nuts, 2 tablespoons flour, cinnamon and butter and set aside.
For the Muffins:
Sift the dry ingredients into a bowl - the 1 1/2 cups of flour, baking powder, salt and cinnamon. Cut in the butter or coconut oil until the mixture resembles coarse crumbs.
Combine the egg and milk and pour into the flour mixture. Stir just until moistened.
Grease muffin pans or line with paper cups. Filling the muffin cups 2/3 full.
Bake the muffins at 375°F for 20 minutes or until a toothpick inserted in the middle comes out clean.
Makes 12 muffins.
Notes
Optional Streusel Method:If you want your muffins to really look like coffee cake, take 1/2 of the streusel mixture and put it in the middle of the muffin batter.Put 1/2 of the muffin batter into the muffin tin cups. Then sprinkle each muffin with the streusel mixture. Add the second layer of muffin batter. Then top the muffins with the remaining streusel.Bake the muffins as above, at 375°F for 20 minutes or until a toothpick inserted in the middle comes out clean.
