This corned beef hash recipe is one of my favorite breakfast or lunch recipes, when I want something just a little different. Topped with a poached egg or two, it is the perfect mix of savory flavors.
1red pepper, diced, seeds and fibre removed (optional)
2stalkscelery, chopped, optional
1clovegarlic, optional
1cupmushrooms, optional
1tablespoonWorcestershire sauce
2tablespoonsparsley, or chives, minced
Salt and pepper as needed
1/3 - 2/3cupstock, or cream sauce, optional
6poached eggs, or fried
Instructions
Dice the corned beef. Dice the potatoes. Melt butter in a large saucepan. Stir in the onion, pepper, celery, garlic and mushrooms until tender. Remove the garlic. Add beef and potatoes and Worcestershire sauce, minced parsley, salt and pepper.
Cook and stir lightly over medium heat while gradually adding the stock or cream sauce. Stir and cook until well blended and thoroughly heated.
Place on a hot platter and serve topped with poached or fried eggs.
