1 aluminum loaf pan or other pan of a similar size
Ingredients
1/2cup long-grain white rice, (or Basmati rice)
1cupchicken stock
1/2 lemon, juiced
1teaspoonbutter
1tablespoonfresh herbs , chopped fresh Italian parsley, tarragon, thyme, dill or a combination
Instructions
Lightly grease a foil 9" x 5" loaf pan.
Add the rice, chicken stock, lemon juice and herbs and mix well. Do the top with the butter (or mix it in). Cover the top lightly with a sheet of foil, shiny side in and crimp well to seal.
Place over medium heat on the barbecue and grill for 20-25 minutes, or until the rice is cooked and fluffy.
Towards the end of cooking time check the rice. Stir it and add a bit more butter or stock if the rice appears too dry before it is done.
Makes 3 to 4 servings.
Notes
Notice that this recipe just uses 1/2 cup of dry rice. If you have a larger crowd simply get another foil loaf pan and make another batch of this wonderful lemon rice. You can make as many batches as you need. Use a larger foil baking pan if you are making a large batch.
