Instructions
Sauté the eggplant and onion in oil until tender. Add the red or green pepper, herbs, tomatoes, salt and pepper.
Simmer for 10 minutes. Taste to see if the seasoning is to your liking and adjust if necessary.
Serve over rice (or pasta if you prefer)
