Rhubarb Cake is a delicious combination of a little bit sweet and a little bit tangy. This is one of the best cake recipes to make in the spring when fresh rhubarb is ripe and plentiful.
1cupbuttermilk, or see Cooking Tip for substitution
1teaspoonbaking soda
1teaspoonvanilla
2cupsflour
1/2cupshortening
1 1/2cupsrhubarb, chopped, fresh
1/3cupsugar
1teaspooncinnamon
Instructions
Preheat oven to 350ºF.
Cream sugar and shortening together. Add egg and mix. Add baking soda, milk and vanilla. Mix in the flour, then fold in fruit.
Pour into a 9" square baking pan and spread evenly in the pan. Mix together the 1/3 cup sugar and 1 teaspoon cinnamon. Sprinkle on the top of the cake.
Bake for 50 - 60 minutes or until a toothpick inserted into the dough portion of the cake comes out clean (the fruit may still be moist).
