6boneless chicken breasts, or 3 pound chicken, cut up and skinned
vegetable cooking spray
1/2cuporange juice, unsweetened
1/4cuplemon juice
1/2teaspoonorange rind, grated
1/2teaspoondried thyme
1/4teaspoondried tarragon
2clovesgarlic, sliced
1teaspoonpaprika
1/4teaspoonpepper
salt to your taste
slices of orange and or lemon, optional
Instructions
Place the chicken in a 13x9x2 inch baking dish coated with cooking spray.
Combine the remaining ingredients, mix well and pour over the chicken. Add slices of orange and/or lemon to the pan. (Optional)
Cover and bake the chicken at 350°F for 30 minutes, basting every 15 minutes. Uncover and bake for another 15 minutes or until the chicken is done.
If you are using boneless chicken pieces, cook them for less time. I would cook the boneless pieces for about 20 minutes covered, then uncover the baking dish and bake for 15 minutes as you would with the bone-in pieces.
Makes 4 to 6 servings.
Notes
Serving Suggestions: I love to sprinkle peeled wedges of fresh citrus on and around the chicken. You don't need to use just orange pieces. The plate looks vibrant with slices of grapefruit, orange and lemon. This recipe is wonderful to serve with rice. The rice soaks up those lovely citrus flavors. I would add green beans or asparagus for great color.
