Preheat the oven to 400°F - 425°F. Grease a large rimmed baking sheet (or line with parchment paper).
Combine the olive oil, tarragon, thyme, salt, pepper and garlic in a large bowl. Add the cauliflower and toss until everything is well coated.
Place the cauliflower in a single layer on a prepared pan.
Baked, uncovered, stirring occasionally for 20-25 minutes or until the cauliflower is tender and lightly browned.
Mix together the cheese, lemon juice and parsley. Stir together until the ingredients are combined. Pour the mixture over the cauliflower then put back in the oven for another few minutes, until the cheese is heated.
