Grease 10 cups of a 12-cup muffin pan or line the muffin cups with paper liners. Pour water into any empty muffin cups.
Combine the wet ingredients, except the jam, in a medium-size bowl.
Add the flour and blend in the sugar, baking powder, cinnamon and salt. Stir just until combined.
Use half of the batter and divide it evenly among the prepared muffin cups. Then add a spoonful of your favorite jam to each muffin cup on top of the batter.
Top up each muffin cup with more batter to encase the jam. Each muffin cup should end up being about 2/3 full. (See the image of the batter topped with jam in the muffin cups).
Bake in the center of the preheated oven at 375° for 20-25 minutes or until the muffins are golden and the top springs back when lightly pressed.
I always check for doneness by inserting a toothpick into the center of the muffins. When the toothpick comes out dry (no wet batter on it), the muffins are ready.
Cool in the pan for 10 minutes, then place them on a rack to finish cooling.
Enjoy these muffins on their own or with a bit of butter.
