I think oatmeal raisin cookies are my absolute favorite cookies. Leave the raisins out if you really want to but they add so much flavor in my opinion.
Preheat the oven to 375°F. Coat 2 baking sheets with cooking spray.
Sift the flour, cinnamon, baking soda, baking powder and salt together in a large bowl. In a medium bowl, with an electric mixer on medium speed, combine the brown sugar, granulated sugar, applesauce, butter, egg white and vanilla extract. Add to the flour mixture and stir to combine. Stir in the oats and raisins.
Drop the dough by rounded teaspoons onto the prepared baking sheets. Bake at 375°F for 8 minutes or until golden. Makes about 40 cookies.
