A "nicoise" salad contains potatoes, but is far from the usual potato salad. This is a very easy to make potato salad nicoise recipe that is a bit different than the traditional.
1 1/2cupsgreen beans, fresh, cut into 1 1/2 inch pieces
1cupmayonnaise
2tablespoonsonion, minced
1tablespoonlemon juice
1tablespoonmustard
1 1/2teaspoonsgarlic salt
1/4teaspoonground pepper
1poundsalmon, fresh, cooked
Lettuce leaves
2eggs, hard cooked, quartered
1cupblack olives
1tomato, cut into wedges
Instructions
Cook potatoes until tender. Drain and rinse under cold water. Slip skins off and slice. Cook green beans under just tender crisp. Drain and immediately rinse them in cold water to retain their color.
In a large bowl, stir together mayonnaise, onion, lemon juice, mustard, garlic salt and pepper, Add the potatoes, green beans and tuna. Toss, breaking up tuna into chunks, until mixture is evenly coated. Cover and refrigerate.
To serve, mound salad on lettuce-lined plate and garnish with eggs, olives and tomato wedges.
