Instructions
In a small pan, heat the oil over high heat. Add the chilies and garlic. Cook, stirring, until softened.
Remove from the heat and stir in the lime juice, sugar, fish sauce, lemon grass and basil. Pour the mixture over the cooked chicken and let stand for 30 minutes.
While the chicken is marinating in the sauce, heat the pan again to a medium heat. Sauté the carrots, bell pepper, cabbage leaves and peas for about 5 minutes or just until they are tender. Add the green onions to the pan at the end.
In a separate pot, cook the rice noodles according to package instructions. Drain and rinse them well. Set the noodles aside for a moment.
Add the chicken and sauce to the pan you made the sauce in and heat it all together. Pour this mixture over the noodles, mix it all together and serve.
Sprinkle with chopped peanuts to serve if you are using them.
Makes 4 servings.
Notes
Note:You can add the whole stalk of lemongrass to the pan, chopped into a few pieces, then remove it before serving. If you want to keep it in the dish to eat, just use the lower 4 to 6 inches of the stalk. Peel it until you reach the more tender part of the stalk and chop that finely. Add to the pan.Chop the remaining lemongrass into large pieces, so you can easily remove these inedible pieces from the pan before serving.
