1/2cupbeef broth, (vegetable broth or tomato juice work well too)
1cupvegetables, chopped - peas, green beans, celery, red or green peppers (all optional)
1cuptomato sauce, or ketchup (gluten-free if needed, optional)
Instructions
Preheat the oven to 350°F.
Mix all the ingredients well and place the mixture into a loaf pan. The loaf pan can be either metal or glass. Pour the tomato sauce or ketchup over the meatloaf and spread it out evenly.
Bake the meatloaf at 350°F for about 1 hour.
Add more tomato sauce to the top after baking if you desire.
Serves 6.
Notes
Of course the traditional way to serve meatloaf is with mashed potatoes. I still think they are a perfect pairing. Here is our recipe for classic mashed potatoes.
