Put a folded towel or tea towel on the bottom of a large, heavy pot. Place the lobster on it. Cover with cold salted water. Bring the water to a boil and cook for 5 minutes. Reduce the heat and simmer for 10 to 15 minutes, slightly less if the lobsters have recently shed and are soft. Drain.
Serve the lobster at once, leaving the head, body and tail intact and surrounding the lobster body with the claws. Provide each person with a small bowl of garlic butter for dipping and lemon wedges. Once it is removed from the shell, drizzle the lobster meat with lemon juice and dip into the warm garlic butter.
