If you like a baked fish recipe with a little bit of a kick, you will love this Cajun Haddock. Actually, any thick, firm fleshed fish will do nicely in this recipe.
In a small bowl combine salt, oregano, cayenne pepper, paprika, black pepper, fennel seeds and thyme. Sprinkle over 1 side of the fillets and rub in with your fingers.
Preheat oven to 400ºF.
In a large oven proof skillet, heat oil over medium heat. Cook the fillets, spice side down, until browned, about 2 minutes. With large spatula, turn the fillets.
Place skillet in the preheated oven and bake until the fish flakes easily when tested with a fork, about 5 minutes.
