Cucumber Salad
2 cucumbers, peeled and diced 1 large tomato, cored and chopped 3 tablespoons lemon juice 1 cup plain low-fat yogurt or sour cream 4 scallions, minced 1/2 cup fresh mint leaves, chopped fine 1/2 cup fresh parsley leaves, chopped fine 1 clove garlic, chopped fine black pepper to taste
Combine the cucumbers and tomato in a salad bowl. In another bowl, mix together the lemon juice, yogurt or sour cream, scallions, mint, parsley, garlic and black pepper. Pour over the cucumbers and tomato. Mix gently.
