Peach and Strawberry Sherbet Recipe

Ingredients
 
 

  • 1 pound strawberries, fresh, chopped
  • 4 peaches, large
  • 4 tablespoons lemon juice, fresh
  • 1 cup sugar, superfine

Instructions
 

  • Add the peaches to boiling water and cook for 2 minutes. Remove the peaches from the pot and immerse them immediately into cold water. When the peaches are cool enough to handle, remove the skins and stones. The skins will come off quite easily.
  • Mash the peaches into a pulp in a large mixing bowl. Add the strawberries and lemon juice and add it all to a food processor. Pureé the mixture in the food processor. Stir the sugar into the fruit mixture and pureé for another 10-15 seconds. Pour the mixture into a large, shallow dish and freeze until it becomes hard.

The sherbet is easier to serve if you remove the dish from the freezer 1 hour before serving and let it soften a bit in the refrigerator.

Note:

You can replace the peaches with another pound of strawberries to make an all strawberry sherbet.

What is the difference between a sherbet recipe and a sorbet?

I always thought that the word sorbet was just French for sherbet, but apparently not. “Officially” sorbets don’t contain any dairy products, while sherbets may or may not. So under that definition this is recipe can either be a peach and strawberry sorbet or a sherbet recipe. Either way it is a perfect summer dessert (or any time for that matter).
