Sour cream pancakes – oh yes please.

Pancakes are one of North America’s favorite breakfast recipes.

They are delicious by themselves, smothered in your favorite toppings, whether that is sweet syrup, sliced bananas or strawberries or something like my favorite, applesauce.

Any way you serve them pancakes are a real breakfast treat. Could they even get any better? Well yes.

Sour cream pancakes are the ones for you if you are someone who loves tender and fluffy pancakes.

I love trying new things, especially new types of pancakes.

Along my journey of discovering new recipes for all kinds of pancakes, I came across sour cream pancakes, and this sour cream pancake recipe in particular.

These pancakes are so light and fluffy I think you will really love them.

The recipe for sour cream pancakes below will show you that, yes, pancakes can be taken to an even higher level of delicious with just a couple of tips.

How to Make Fluffy Pancakes

Although we all love pancakes most of us have had experiences with homemade pancakes that are flat, tough and not that exciting.

That turns many people to making pancakes from a package.

But why pay for a packaged mix that may have several additives that you don’t really want to consume when you can easily learn how to turn your own homemade pancakes into the best you have eaten?

We want light and tender homemade pancakes and this is the simple, tried and true way to get them.

Making pancakes like this assures that they will be tender and fluffy each time you make them.

Why Sour Cream Pancakes Work

We tend to think of pancakes as sweet so we don’t often associate them with an ingredient like sour cream. Sour cream is sour, right?

Well it turns out that the addition of sour cream to your fairly standard pancake recipe brings pancakes to a whole new level.

As shocking as that might sound, it shouldn’t surprise us too much. Yogurt, buttermilk and sour cream all add a tenderness to baked goods they are added to that plain milk doesn’t.

I don’t know if it is because all of these ingredients are a bit fermented or not, but any of the ingredients above will make your pancakes more tender than without them.

Sour cream is a wonderful addition to pancakes.

Although we eat pancakes a bit sweet here in the west, Europeans have known for centuries that a bit of tart taste added to a sweet recipe can make a world of difference to the taste.

How To Make Fluffy Pancakes

The addition of sour cream really amps up the flavor of these pancakes and helps them to be tender.

Another great tip for making your pancakes fluffy is to beat your egg whites before adding them to the batter.

With most pancake recipes you add whole eggs to the batter. That does make a tasty pancake for sure but you can do one little thing to make them much fluffier.

Separate the egg whites from the yolks and place them in a separate bowl. Using a whisk or electric mixer (the mixer is much faster) beat the egg whites until they a fairly firm.

You don’t have to beat them until they form hard peaks. That’s a bit too much. But do beat them until the whites form a soft peak.

Add the beaten egg whites to the rest of the batter ingredients that are already mixed and you are ready to cook perfectly light and fluffy pancakes.

Beating the egg whites adds air to the whites which keeps the batter mixture airy and light.

It’s a simple tip that works every time.

Now go ahead and make your tasty sour cream pancakes.

I top my pancakes the way I grew up eating them – with applesauce. Use whatever syrup, sauce and/or fruit that suits your taste buds.

Sour Cream Fluffy Pancake Recipe

You will make tender and fluffy pancakes every time with this easy recipe.

Ingredients
  

  • 1 cup all-purpose flour
  • 1/4 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1 teaspoon butter, melted
  • 1/2 cup sour cream
  • 1/4 cup milk, or more to get your desired thickness
  • 2 egg yolks, beaten
  • 2 egg whites

Instructions
 

  • Mix together the butter, sour cream, milk and egg yolks.
  • In a separate bowl, beat the egg whites until they are almost stiff, but not dry. Fold the egg whites into the egg yolk mixture.
  • Sift the flour, cinnamon and salt together, then add it to the liquid ingredients. Beat the mixture together.
  • Heat a skillet with a bit of oil to medium heat.
  • Scoop the pancake mixture and place in the hot skillet, creating small to medium size individual pancakes.
  • Cook each pancake until small bubbles begin to form on the top of the pancake. Turn the pancake over and cook on the other side until it is golden as well.
  • Makes 10 - 4 inch pancakes.
