I love cookbooks by recipe developer Camilla Saulsbury. She has a keen sense of what works well together. Camilla has also spent a lot of time researching and developing gluten free recipes. The recipes in this coconut cookbook are not only gluten free but grain free, nut free an vegan.

We have all heard about the fantastic health benefits of coconut in all its forms. Camilla fills her recipes with coconut, using coconut flour, coconut oil, coconut sugar as well as fresh and dried coconut. It’s the full coconut experience.

I love that Camilla explains all of these forms of coconut at the beginning of the book, as many people nay not have tried them yet. I am a real lover of coconut sugar and a new convert to cooking with virgin coconut oil. It’s delicious.

There is also information at the beginning of this book about how to set up your gluten free pantry, a real bonus for those who need to eat gluten-free.

Camilla’s recipes cover every part of your day, from breakfast recipes, to breads and muffins, salad, soups and stews, main dishes and sides, cookies, cakes, pies and other desserts. She even has a section on drinks.

I am a cookbook fan, but I am particular. I love cookbooks with recipes I may actually try. Nothing super gourmet for me. There are many recipes in this cookbook that look quite delicious and that I will actually use. So for me the cookbook is a “Buy” recommendation.
