Here is a delicious broccoli salad recipe with craisins and onion and a great simple dressing.

Yitty’s original recipe calls for craisins, but I prefer to use dried cranberries, so I have put that in the recipe. Use whatever one of these you prefer or have on hand.
You can even substitute another dried fruit like blueberries. I haven’t tried that yet, but I’ll bet that it would be delicious.
Yitty’s version of this salad is vegetarian, but you can certainly add chopped fried bacon or ham to it if you like. Bacon goes so well with broccoli doesn’t it?
Either way it’s a great salad for picnics, summer meals and entertaining.
I love broccoli salads with bacon so I often add it in.
It’s also a fantastic way to get picky eaters to eat their veggies. Just add Craisins and a great dressing and voila – lots of picky eaters may just try eating their broccoli.
Broccoli Salad Recipe
Ingredients
- 2 pounds broccoli, chopped
- 1 red onion, thin sliced
- 1/2 cup dried cranberries, or craizens
- 2 tablespoons sugar
- 1 cup mayonnaise
- 1/4 cup vinegar
- pinch salt and pepper to taste
- 1/4 pound cashews, roasted and chopped (optional - or use a nut of your choice)
Instructions
- Mix together the broccoli, red onion and craisins in a bowl. Add the sugar, mayonnaise, vinegar, salt and pepper and nuts. Stir to mix everything together well.
- Refrigerate the broccoli salad until you are ready to serve it.
Nutrition
This recipe is also gluten free if you make sure your mayonnaise is gluten free.
The carb count isn’t too bad either, so it can be a good broccoli salad recipe for those with diabetes too.
