  • Garlic Infusion Rub

  • 6 cloves garlic, minced
  • 1/4 cup grainy Dijon type mustard
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons olive oil

Step 1

Rub beef all over with salt, pepper and this rub mixture before roasting.

Lemon Pepper Rub

Rind of one lemon, finely zested or ground
4 garlic cloves, minced
1 tablespoon olive oil
1 tablespoon lemon juice

Season roast with salt and pepper. Combine the rest of the ingredients and rub over roast before roasting.

Teriyaki Rub

3 tablespoons soy sauce
3 tablespoons brandy
1 tablespoon dry mustard

Mix all ingredients and brush over roast. The soy salt is probably salty enough that you won’t need to add salt to the roast.

Horseradish Rub

1 tablespoon horseradish
1 tablespoon grainy Dijon type mustard
1 teaspoon garlic, chopped
1 teaspoon cracked black pepper

Combine all and spread on roast before roasting.

Espresso Rub

1 teaspoon packed brown sugar
1 teaspoon regular coffee or espresso, finely ground
1 teaspoon each salt and pepper

Combine all and rub over roast before roasting.

Each of these rubs will season a 4 to 6 pound roast. You can easily double or triple the recipe to cover a larger piece of meat if needed.

Please make sure your soy sauce is gluten free if you need gluten free recipes. Not all are.

    Delicious rub recipe

Grind several cloves of garlic, olive oil, sea salt, freshly ground black pepper, a pinch of mild curry and grind with a mortar and pestle or food processor until pasty, rub all over roast before roasting as per this recipe, very tender and flavorful.
