This is a delightful spinach strawberry salad with that perfect mix of sweet and tart.
Almonds and poppy seeds add crunch and taste. It’s a quick and easy recipe to make and looks beautiful on the plate.
Spinach Strawberry Salad
Ingredients
- 1 pound flat leaf spinach, washed and well dried
- 3 kiwi fruit, peeled and sliced
- 1 pint strawberries, trimmed and quartered or sliced
- 3 tablespoons lemon juice
- 1 tablespoon honey
- 1/4 cup olive oil
- 1 tablespoon poppy seeds
- salt and pepper to taste
- 1/4 cup slivered almonds, toasted
Method
Step 1
Place spinach in large salad bowl (a flatter bowl works best). Arrange kiwi slices and strawberries on top.
Step 2
Combine all ingredients for salad dressing. Toss dressing with salad just before serving. Sprinkle with toasted almonds. Enjoy this wonderful strawberry spinach salad!
Variation:
- Replace the honey in the dressing with stevia, coconut sugar or another sugar substitute and this becomes a great diabetic recipe or low carb recipe.

IT WORKS EVERY TIME BUT YOU NEED TO WORK IT; TO WORK FOR YOU!
Mix and match to get variety of proteins, fruits,and veggies!!
Water upon rising is key (I add lemon to mine – optional)8oz.
BREAKFAST: 1 bowl of sugar free cereal with low fat milk(fiber cereal) and add fresh fruit (berries or some banana) any kind.
Lunch: Lettuce salad with all your favorite fixings and a low fat dressing.
I add one of these: a can of tuna or a can of chicken or a large egg for protein to my salad.
If you need to have more to fill yourself with the salad you can eat along with it either a baked potato or yam or substitute a cup of soup
on the side. Sometimes the salad will be enough. Whatever you need.
Do the same thing for dinner
Be sure to drink at least 8 glasses of water daily.
Snack in between with fresh fruit as needed.. don’t exceed 5 in a day
You will have variety and lose weight the good way.
I also take a good multiple vitamin/mineral.
You will lose on an average 2-4 pounds a week.
