Fantastic Vegan Muffins!

This is a fantastic vegan baking book! You would never believe that these recipes don’t have dairy, eggs, or butter. I bought this for my sister in law, who is vegan, and she been using it nonstop. I love this author’s baking books and own her big muffin book, 750 Best Muffin Recipes… But my daughter and her fiance are vegan, and though the big muffin book has an entire chapter of vegan muffin recipes, I wanted to wait for this 100% vegan book to give to my daughter. Well, she flipped for it. I have tried several of the muffins she has made from the book and would never have known they were vegan–excellent texture, delicious flavors.
