Herbed Lemon BBQ Rice

BBQ rice may sound crazy or impossible, but I can assure you it’s not.

This lemon rice is so easy to do on the barbecue! I have made it many times and it has been successful each and every time.

Sometimes we just want a change from potatoes with our barbecues. I love potatoes, but I like to change it up once in a while.

Well the next time you are in the mood for a change, try this barbecue rice recipe.

Rice on the barbecue? Yes!

It’s so very easy to make and really flavorful. It really is one of my favorite bbq side dish recipes.

Just add some cole slaw or grilled vegetables, and of course your meat or fish of choice, and your barbecue is set to be a big hit.

How about this for a light barbecued meal? Grilled fish or salmon, bbq rice and grilled vegetables.

Now that’s my kind of barbecue.

So where do we start? Let’s go over the simple ingredients you need to have on hand for this grilled rice recipe:

Ingredients Needed for Lemon BBQ Rice

This wonderful lemon rice recipe, done on your barbecue, is so easy to make. I love that you can just sit it on the barbecue and let it cook alongside the rest of your outdoor meal.

The list of ingredients you need for this one is not long.

Start out with plain old white rice. Not instant rice or converted rice, just long grain white rice. I sometimes use Basmati rice and it works out perfectly.

You are going to cook it in chicken stock for extra flavor. You can use vegetable stock too if you would prefer that.

Homemade stock is wonderful of course, but feel free to use canned stock or stock in the tetra pack. All of them work really well.

You need the juice of 1/2 a lemon and a bit of butter.

The only thing left to add is a mix of fresh herbs.

I use freshly chopped Italian parsley, some thyme leaves or freshly chopped dill to flavor the rice. You can use a mix of herbs if you want. Just use the herbs that you love and it will taste great.

If you don’t have fresh herbs don’t worry. Just use dried parsley, thyme, dill or even basil. Because you are cooking the rice in the broth, the dried herbs will have a chance to moisten while the rice cooks and will taste just fine.

Making Lemon BBQ Rice

The rice is going to take 20 to 25 minutes to cook on the barbecue or grill, so start putting it together about 1/2 an hour before you plan to eat it.

You will need an aluminum loaf pan to cook the rice in. You can use a loaf pan from your kitchen too, but it might get darkened from being on the grill, so the choice is yours.

Grease the loaf pan lightly with butter. Then add the rice and the chicken stock.

Juice 1/2 of a lemon and add that in.

Chop your herbs finely and add them in to the loaf pan as well. Stir it all together, then add the butter to the top of the mix.

I cover the loaf pan with a sheet of aluminum foil and crimp it around the top edges to make sure you keep all of that moisture inside to cook the rice.

Just remember to keep it covered while the rice cooks, just like you would when you cook it in your kitchen. Rice needs the moisture to steam cook.

That’s it. Now you are ready to place the loaf pan on the grill and wait for deliciousness to happen.

And it will be delicious.

Another this I like about this bbq side dish recipe is that you can easily multiply this recipe to serve as many people as you would like.

Use a second or third loaf pan for a larger group. If you have even more people to feed, you can use a larger aluminum pan.

Easy and Herb Lemon BBQ Rice

When you want a change from potatoes at your summer barbecue meals, this lemon rice, cooked on the grill, is a must try.

Equipment

  • 1 aluminum loaf pan or other pan of a similar size

Ingredients
  

  • 1/2 cup long-grain white rice, (or Basmati rice)
  • 1 cup chicken stock
  • 1/2 lemon, juiced
  • 1 teaspoon butter
  • 1 tablespoon fresh herbs , chopped fresh Italian parsley, tarragon, thyme, dill or a combination

Instructions
 

  • Lightly grease a foil 9" x 5" loaf pan.
  • Add the rice, chicken stock, lemon juice and herbs and mix well. Do the top with the butter (or mix it in). Cover the top lightly with a sheet of foil, shiny side in and crimp well to seal.
  • Place over medium heat on the barbecue and grill for 20-25 minutes, or until the rice is cooked and fluffy.
  • Towards the end of cooking time check the rice. Stir it and add a bit more butter or stock if the rice appears too dry before it is done.
  • Makes 3 to 4 servings.

Notes

leafNotice that this recipe just uses 1/2 cup of dry rice. If you have a larger crowd simply get another foil loaf pan and make another batch of this wonderful lemon rice. You can make as many batches as you need.
