I love the way this soup takes you to a whole other world with just a few spices. That’s part of the joy of cooking isn’t it? That we can create these wonderful dishes that bring the tastes of the world to our kitchen table with just a few simple ingredients and a great recipe.
Serve the soup with the yoghurt drizzled on top. Very easy and very delicious.
This is a very healthy soup too and quick to make. I love easy dinner recipes and this one would be perfect with some crusty bread and maybe a side salad.
Morrocan Carrot Soup Recipe
Ingredients
- 2 tablespoons butter
- 1 cup onions, chopped
- 1 pound carrots, peeled and chopped
- 2 1/2 cups chicken, or vegetable broth
- 1 1/2 teaspoons cumin
- 1 tablespoon honey
- 1 teaspoon lemon juice
- 1/2 cup yogurt
Instructions
- Cook the butter, onions, carrots and chicken broth together. When the vegetables are cooked, puree the soup, then whisk in the cumin, honey and lemon juice.
Nutrition
Makes 4 to 6 servings.
This is a good diabetic recipe and it’s gluten free as well. It is fairly low carb too, although strict low carb eaters would say that carrots are too high in carbs for them.
Obviously use vegetable broth if you want this recipe to be vegetarian.
