Moroccan Carrot Soup

Thanks Marja, it’s really a fantastic soup recipe. Easy too. And I love, love love the Moroccan flavors. It’s a light touch, but it’s there.

This easy gluten free soup recipe adds a bit of cumin to the carrot soup recipe. The cumin brings a warm spiciness to the carrots. It’s not hot, just a rich warm flavor.

Then Marja adds a bit of honey for sweetness, some lemon juice to balance it all out and yogurt to add creaminess without the fat and extra calories from cream.

It all really works well.

I love the way this soup takes you to a whole other world with just a few spices. That’s part of the joy of cooking isn’t it? That we can create these wonderful dishes that bring the tastes of the world to our kitchen table with just a few simple ingredients and a great recipe.

You can also serve the soup with extra yoghurt drizzled on top. It’s very easy and very delicious.

This is a very healthy soup too and quick to make. I love easy dinner recipes and this one would be perfect with some crusty bread and maybe a side salad.

Ingredients
 
 

  • 2 tablespoons butter
  • 1 cup onions, chopped
  • 1 pound carrots, peeled and chopped
  • 2 1/2 cups chicken, or vegetable broth
  • 1 1/2 teaspoons cumin
  • 1 tablespoon honey
  • 1 teaspoon lemon juice
  • 1/2 cup yogurt

Instructions
 

  • Cook the butter, onions, carrots and chicken broth together.
  • When the vegetables are cooked, purée the soup, then whisk in the cumin, honey and lemon juice.
  • Makes 4 to 6 servings.

This is a good diabetic recipe.

It’s gluten free as well. It is sometimes difficult for those who need gluten free recipes to find really delicious food to eat. Add this recipe to your list of must-trys.

It is fairly low carb too, although strict low carb eaters would say that carrots are too high in carbs for them.

Obviously use vegetable broth if you want this recipe to be vegetarian.
