What is Gram Flour in Fried Cauliflower?

Gram flour is chickpea flour. It is also known as besan, gram flour or ban.

Chickpea flour has a different taste and consistency than wheat flour. It is tastier than wheat flour, but doesn’t have the same high gluten content that wheat flour has.

You can buy chickpea flour in any Indian specialty grocery store. Some regular grocery stores that cater to international customers sometimes also carry it.

If you can find it in your area and you like Indian food, it’s good to have a small bag of it on hand. Gram flour is used in several popular Indian foods.

Fried Cauliflower, Indian Style

Fried cauliflower is a crispy and spicy, easy to make side dish or snack. This version is gluten free.

Ingredients
 
 

  • 1 cauliflower, cut into bite sized pieces
  • 3 cups gram flour, ban or chickpea flour
  • 2 teaspoons cumin seeds, black, kanji or halo era
  • 2 teaspoons poppy seeds, thus thus or ponto
  • green chilies, chopped, or to your taste
  • 1 teaspoon ginger, chopped
  • salt, as per taste
  • 1 pinch baking soda
  • mustard oil, to deep fry
  • Water

Instructions
 

  • Cut the cauliflower and half boil it with salt.
  • In a bowl, mix ban (chickpea flour), salt, thus thus (poppy seeds), kanji (cumin seeds), green chilies, ginger, salt and baking soda nicely and make a consistent batter.
  • Heat the oil in a deep frying pan. Dip the cauliflower pieces in the batter and deep fry until the coating is golden.

Fried Cabbage:

You can also make this recipe with cabbage instead of cauliflower. Cabbage with this savory coating over it would be delicious too.

If you do that, follow the steps above. The only difference in using the chopped cabbage is that there is no need to boil it. Other than that just follow the same directions above.
