This easy sausage and potato casserole recipe has the flavorful and healthy addition of fresh kale.
Until lately I hadn’t heard of very many kale recipes. This one incorporates it beautifully with mashed potatoes and sausage.
The recipe was originally shared with us by Marja B. from Dixville Quebec Canada. She says it is a Dutch recipe and a real winter dish.
Sometimes it is the simplest food that tastes absolutely spectacular isn’t it? This is a real easy dinner recipe. I love one pot dinners. They are great for cleanup and easy on the cook. I am always up for something that is easy on the cook.
This recipe is gluten free as long as your sausage is gluten free. Make sure if it’s important to you.
Kale, Sausage and Potato Casserole Recipe
Ingredients
- 8 potatoes
- 2 bunches kale
- 1 Polskie Hillshire Farm sausage, or your favorite Polish type sausage
- milk
- butter
- salt and pepper to taste
Instructions
- Peel the potatoes. Wash the kale and chop it, using only the leaves. Boil together the potatoes, kale and Polish sausage. When ready, take the sausage out and put it aside.
- Mash the kale with the potatoes, put salt and pepper to taste, also add some butter and a bit of milk. Slice half of the sausage into small pieces and add them to the kale and potato mixture. Mash this together until you have a nice smooth consistency. Put it all in a casserole, then slice the other half of the sausage and arrange it on top of the casserole.
- Put it in the oven at 350ºF until it is heated and serve. It is very delicious.
If you have some leftover gravy, you can ladle some over the food.
The recipe says to cut the sausage up. I cut part of it and put it in the potato and kale mix, then left the other sausage whole and served it alongside the vegetable mix.
